How to make tasty Crustless Mini Quiches

These mini quiches are a perfect recipe for anyone who follows a gluten free diet. All the tastiness of a quiche but no pastry! I have made these mini quiches with a number of students now and they have enjoyed making personalised versions with their own choice of ingredients. It’s good for practising chopping skills and really easy to follow as there aren’t many steps. It’s ideal for people who need to avoid gluten and also easy to adapt for those who follow a dairy free diet too – just use vegan cheese or leave the cheese out.

Hints and Tips

🥒 Our mini quiche recipe uses courgettes, mushrooms and cheese but there are many other fillings you could use instead. You could try ham, cooked bacon, sweetcorn, olives (make sure they have the stones removed), tomatoes, onion or spring onion, peppers, broccoli, leeks, peas, sun-dried tomatoes, a pinch of dried mixed herbs, tinned salmon or tuna……

🥒 If you have nice muffin tins you can make the mini quiches directly in the tins without the need for a liner, just brush them with cooking oil before putting the ingredients in. Silicone cake cases and muffin tins are also very popular but I haven’t tried them myself yet. If your mini quiche sticks to a paper liner just ease round the edge with a knife – mine popped out just fine like this while still warm.

🥒 Beat the eggs and milk in a jug – easier to pour out of than a bowl.

🥒 You can easily halve the recipe to make 6.

Serving Suggestions

🥒 Our mini quiches are tasty hot or cold.

🥒 They’re ideal for lunchboxes, picnics or breakfast.

🥒 I served the mini quiches pictured above for lunch with green salad, potato wedges and mayonnaise (a must-have with wedges 😀).

🥒 You could also serve them with: roasted vegetables, chips and beans, crusty bread, green salad, coleslaw, jacket potatoes, garlic bread, buttered new potatoes or anything you enjoy! Crunchy things are a good texture to compliment the squidgy quiche 😀.
