Easy and Delicious Double Chocolate Banana Muffins

Double chocolate banana mufffins
These delicious muffins are a great way to use up old bananas which give a lovely moist texture to the cake. They’re really easy to make too.

All you need to make these lovely chocolatey muffins are a few store cupboard ingredients and 3 over-ripe bananas. This recipe makes 10 good sized muffins, or more smaller bite-sized ones. Hints and Tips

  • If your butter has come straight from the fridge it won’t be very easy to cream with the sugar. I always give mine a few seconds in the microwave to soften it a little before I add the sugar to the bowl – it makes it a lot easier to cream.
  • You will need two bowls. One for the dry ingredients and one for the butter and sugar. You will also need something to mash the banana on. This could be another bowl or even a plate.
  • I mashed my bananas with a fork but young people with co-ordination difficulties might find a potato masher easier.
  • The chocolate chips could be left out of the recipe. The muffins would still be deliciously chocolately without them.
  • It is a good idea to sieve the dry ingredients into the bowl to help to ensue they are mixed well and that the cocoa powder is nicely broken up (it can be a bit clumpy).
