How to make these tasty Courgette Fritters

These Courgette Fritters are delicious and easy to make. Just follow our step-by-step, free-to-download Widgit symbol and photo recipe below.

These Courgette Fritters are a tasty way to add vegetables to your diet – you could make them the main focus of a lunch, or make smaller ones as a vegetable side for dinner. The recipe below makes 6-8 large fritters (pictured right) but you could make lots more smaller ones. As ever, our tried and tested recipe has Widgit symbols and photos for ease of reading. Why not grab some courgettes and get frying!

Hints and Tips

Fresh thyme

~ You could replace the fresh thyme with dried thyme. For the quantities in the recipe below I would suggest 2 tsp dried thyme. If you are adjusting the recipe quantities I would go with 1 tablespoon fresh thyme = 1 tsp dried thyme.

~ You can easily adjust the recipe to make more or less courgette fritters.

~ Drain the fritters on a piece of kitchen roll when you take them out of the frying pan and then pop them in the oven to keep warm while you finish cooking the batch.

~ If you have fresh thyme you could use some of the leaves to garnish the cooked fritters when you serve them.

~ The batter mixes up nicely using a hand whisk, but go back to using a wooden spoon when you add in the courgettes otherwise your whisk gets clogged up with the grated vegetable.

As pictured above courgette fritters make a lovely warm lunch with some garlic bread and a dollop of sour cream. Here are a few other things you could enjoy with them too…..

~ coleslaw, green salad, scrambled or poached eggs, ratatouille, tomato ketchup for dipping, roasted vegetables, mango chutney, hummus,

~ you could pop them into a pitta bread with some salad for a more substantial lunch

~ they go really well as a vegetable side on all sorts of dinners but especially with salmon, pork chops and curry.
